It may seem silly for someone of my age, but I`ve never made my own soup, don`t remember my mother doing it either. Can someone give me an easy recipe for a chicken and vegetable soup, a thin one, no cream?

I don't really have a recipe number, but if I have a chicken for tea, I boil the carcass up in plain water till the rest of the meat drops off.  To this I add a potato, onions and carrots. (Well I take the bones out first!!)   When they're cooked through I use a potato masher to sort of squash it all together!!  Sometimes I add a small amount of Paxo near the end too.  

If I don't have a carcass I will use a chicken breast instead, and with that I use a stock cube, cos for some reason it doesn't taste of much without the bones being boiled.  

Does that help?  Or even make sense!!!!!!!!!!

Thanks Sue, that`s more or less what I was thinking of doing, but wasn`t sure if I was right or not. I`m getting chicken for next Sunday`s dinner, so I`ll get cracking on it on Monday morning. Wish me luck!

number, I tend to stick the carcass on to boil the same night.  Then take the bones out while the broth is still hot.  That way come the monday you can be picking whatever meat is left on the bones off while the veg etc are cooking.  Then just chuck the meat back in at the end.  Last time I forgot, so the bones etc were stuck in what had become jelly the next day and it was a real chore!

Sometimes I just take a chicken breast chopped small, finely chopped onion, couple of carrots, couple of sticks of celery and a medium sized potato.

Fry onion & celery until soft add chopped chicken breast, fry until browned off (that's the chicken not me).  Then add the rest of the ingredients with a couple of chicken stock cubes and a pint and half of water.  Cook on the hob for 30mins.  Season with salt and pepper.  Luvverly.

Another easy soup recipe is lentil soup.  My kids love it.

Large onion, couple of carrots and about 4oz of the orange coloured lentils.

Fry onion 'til soft chuck the other ingredients in along with a couple of stock cubes and cover with plenty of water.  Bring to boil and simmer for about 30 mins.  Season with salt and pepper.

My favourite is bacon and lentil soup taken from the Hugh Fearnley-Whittingstall family cookbook

The bacon and lentil soup that I made is a HFW recipe that I'm sure he wouldn't mind me repeating to you now that I have acknowledged that it is his :D
This recipe makes large quantities.....to serve about 12
3 onions
3-4 carrots
4-5 celery stalks
10 smoked bacon rashers (I used unsmoked)
Olive oil
A mixture of red and green lentils to fill a measuring jug to the 900ml mark
3-4 stock cubes
3 litres of water
1 tbsp Oregano or thyme
Thick squirt of tomato puree
A few good shakes of Worcestshire sauce
Salt and black pepper
Grated Cheddar or parmesan to serve.

Finally chop the onion, carrots and celery and cut the bacon into small pieces. Use enough olive oil to cover the base of the pan and fry all of the above very gently with the lid of the pan on for 10-15 minutes to become tender and slightly shrunken. Stir from time to time. Put the kettle on to boil.
Add the lentils to the pan.
Dissolve the stock cubes in 1 litre of hot water and add to the pan. Add 2 more litres of hot water.
Stir in lots of black pepper, a little salt and the oregano and/or thyme. Add the tomato puree and Worcestshire sauce.
Bring to the boil and simmer gently for at least half an hour until the red lentils are soft and the green ones cooked but with a bit of a bite to them.

Serve with a topping of grated cheddar cheese or parmesan.



I freeze the soup in plastic drinks cups and take one to work where I have a microwave to heat it up

Ooo, those lentil soups sound lovely.  I do like lentil soup, but have never made one.  Thanks.

I presume you still have to soak the lentils first.  Or I suppose you can get pre-soaked.

I made a pan of soup for lunch today. I chucked some red lentils, squash. onion, garlic and sweet potato with a can of plum tomatos, Marigold soup bouillon , mixed herbs and seasoning into the pressure cooker. Cooked for 20 mins then half liquidised the broth so some chunky veg remained. It's different each time depending on the veggies I have. I love butterbeans in soup because when you liquidise it, it's thick and creamy....and very good for you too !!

NO you don't have to soak lenitls. I do pour boiling water over them in a jug while I'm frying the veg though, they start to absorb some of the water.

hbrac that sounds nice
except I've NEVER liked butter beans

I thicken mine with some millet seeds (not budgie ones!)
but apparently soup doesn't keep so well if it's got starch in it, especially potatoes.
Probably oK in the fridge though.

I made some soup today too, with onion, carrot, some chorizo sausage for flavour, lentils and some quinoia grains which were lurking about in a jar......

just the weather for soup

 Just seen this...and yes...you're right Acorn..its SOUP WEATHER (and its a bit 'soupie' as in foggy here today too )

I normally make cream of celery soup..but today I've bought some carrots and a big bag of corriander to make some soup tomorrow...but haven't got a recipe LOL...I'll have to look one up on the net unless someone has a good one for carrot and corriender?  

Definitely going to try some of these recipes here too...good tip on the butterbeans Hils!

OMG this is getting scarey now...you ALL know me far too well!!!

Just remembered...well..to be truthful...SMELT...that I have a big bag of cooking apples of the tree in the garden ..under a seat in the kitchen!!!  I DID buy some roll out pastry (I'm CRAP at making pastry ) to make a pie..but I think the pastry is out of date now!!!!
