Anybody have any good recipes for couscous ? It's getting a bit boring with just hot water and mint and chilli seasoning.

red peppers, apricots, saltanas, nuts, honey, mushrooms, make it with a cube of bovril or chicken stock..
not sure if your a vegetarian?
so omit the meat stocks.. _________________

I had some last night which was lovely with peppers etc in. Had it with Moroccan lamb tagine with apricots and veg. It was soooo filling though I could only manage a quarter of it!  |

I just usually make mine up with either a Chcken or Vegi Stock cube and chuck in some fried( in Frylight) Mushrooms, Red Onions, Peppers and Pea's.. Mmmm lovely and have it with Grilled Chicken or Steamed Fish etc... _________________

| Cous cous also makes a nice crunchy covering - use just like bread crumbs on chicken/fish etc |

It's so easy and quick and low in fat isn't it.
Julie....do you soak the couscous first and then use it to coat the food ? I suppose you could season it first and then put it on the chicken or fish. I never thought of doing that because I associate "breaded" fish with calories. _________________

| I don't I just dip in egg then coat with the cous cous. Seasoning it should work well I tend to like quite bland foods so don't do it myself. |

Deffo will try that. I do like seasoned food though. Must be because my Mum and Grandma always used alot of garlic in their cooking.  _________________
