Moussaka

1lb minced beef or lamb (I use about 1lb and half!)
2 or 3 Aubergines
2 onions chopped
2 cloves garlic
2 tablespoons tomato puree
1 teaspoon ground cinnamon (I use more!)
14oz tin of tomatoes (chopped)
salt and pepper
about tablespoon sugar

TOPPING
2 eggs
Carton of Elmlea Single Cream
3-4oz grated cheddar cheese

1.  I don’t bother salting aubergines…wash…slice in about 1 inch slices..- pile on plate and microwave for about 2 minutes.  

2.  In big frying pan cook mince down and drain off fat. (about 10minutes)

3.  Add onion, garlic, tomato puree, cinnamon, salt and pepper…Stir.

4.  Add tin of tomatoes and simmer for about 30 minutes – taste…add some sugar.

5.  Put sliced aubergine in bottom of dish….pour meat over…put rest of aubergines on the top.  (If you don’t like aubergine..you can use sliced jacket potato..I used to do half of dish aubergine…other half jacket potato..cos one of the boys doesn’t like aubergines….he might if he tried it!!!! LOL! )

6.  Bake in oven Gas 4…350F  ..180C for about 35minutes…THEN add topping!

7.Beat eggs,  cream, cheese, nutmeg…pour over and continue to cook for further 15 – 20 minutes until topping is well risen and golden brown.

ALTERNATIVELY….

3oz butter
3oz plain flour
1 pint milk
3ozs grated cheddar cheese
freshly grated nutmeg
2 eggs

1.  Melt butter in saucepan
2.  Stir in flour until smooth and add milk gradually
3.  Stir in cheese, season with salt, pepper and nutmeg
4.  Allow sauce to cool then whisk up the eggs and then add to sauce
5.  Pour over the top layer of aubergine (YOU DO THIS BEFORE NO.6 ABOVE!)
6.  Bake uncovered for an hour until top is fluffy and golden reg 4  350F  180C

Sorry Chelseagirl!  It was Chocs and her lamb recipes tonight that reminded me again!
