Can anyone recommend some ideas for ways to use up cooked turkey?

Every year I am hunting around for ways to use it up but thought I'd be organised this year and get in any ingrediants I may need beforehand!

One good way to stop having left over turkey, is not to have turkey, its old and boring, try something new

I have beef on Christmas day so only cook a turkey to have cold on Boxing Day but because I am feeding 6 I usually over estimate the size of it!

ok well try this then

Gourmet Turkey Sandwich
~~~~~~~~~~~~~~~~~~~~
Sourdough bread
Jellied cranberry sauce
Cream cheese
Leftover turkey meat (white meat, preferably)

Spread cranberry sauce and cream cheese on opposite sides of bread, and then simply layer on some cold left- over turkey meat (I personally prefer slices of white meat in this sandwich).

Oh, goodness ... just thinking about this sandwich makes me hungry!

Turkey-Stuffed Manicotti
~~~~~~~~~~~~~~~~~~
8 servings

2 tablespoons butter, melted
4 cups cooked turkey meat, chopped or shredded
2 cups ricotta cheese
Ground black pepper to taste
1/2 cup Parmesan cheese
2 green onions, chopped
1 teaspoon dried parsley
1/2 teaspoon rosemary
2 eggs, lightly beaten
4 cups tomato sauce, or 2 jars (15-oz.) spaghetti sauce
16 manicotti shells, cooked until just barely softened

In large skillet, brown turkey in butter for 2 - 4 minutes. Mix turkey with ricotta cheese. Add pepper, Parmesan, green onions, parsley, rosemary and egg; mix well. Cover bottom of baking pans with one cup tomato sauce. **Stuff manicotti shells with turkey mixture; place in baking pan(s) and cover with remaining sauce. Cover baking pan(s) with foil; label and freeze.

To Serve: Thaw. Sprinkle 1/2 cup Parmesan cheese over manicotti. Baked uncovered at 350 F for 35 minutes, or until bubbly and hot in the center.

** I've found that cooling the manicotti shells completely before stuffing them (just run the cooked noodles under cold water in a colander), makes the stuffing process much easier than attempting to stuff hot noodles. I've also discovered that a long handled infant feeding spoon (with a tiny bowl) works perfectly for stuffing manicotti shells.


salad

INGREDIENTS:
6 eggs
6 cups cooked turkey meat
1 (16 ounce) jar sweet pickles, chopped
1 1/2 (10 ounce) jars mustard-mayonnaise blend
3/4 cup mayonnaise

DIRECTIONS:
Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
In a large bowl, thoroughly mix the eggs, turkey, pickles, prepared sandwich and salad sauce and mayonnaise. Chill in the refrigerator approximately 3 hours before serving.



Asian Turkey Barbecue on Sesame Scallion Toasts


1/3 cup hoisin sauce
1/4 cup barbeque sauce
1 tablespoon minced fresh ginger root
2 tablespoons sesame oil, divided
3 cups cooked, chopped turkey meat
salt and pepper to taste
1/2 cup diced green onions, divided
4 English muffins, split

DIRECTIONS:
Preheat the broiler.
In a large saucepan over medium heat, whisk together hoisin sauce, barbeque sauce, ginger and 1 tablespoon sesame oil. Mix in turkey, salt, pepper and green onions, gently tossing until all ingredients are well blended. Cook approximately 10 minutes.
In a small bowl, mix the remaining sesame oil and remaining green onions. Brush the cut sides of the English muffins lightly with the mixture. Place the muffin halves face up on a medium baking sheet.
Broil English muffins 2 minutes, or until lightly toasted. Remove from heat and top with turkey mixture. Serve warm.

all i do is out theturkey in a oven proof dish and pour what Gravy you have left from the day before and tehn add any left over stuffing , preferably sage and onion , or just put some packet mix in , put it in the oven on medium high heat for 40 = mins and make sure its hot and serve with Bubble and squeak made with the remaing veg from the day before , absolutely gorgeous and not too complicated too make with a hangover on Boxing day

Symon I love the sound of Asian Turkey Barbecue on Sesame Scallion Toasts, think I'll give that one a go!

THE THIEF OF BAD GAGS - I didn't think you were meant to reheat turkey and chicken when it's been cooked :? - it's obviously not done you any harm so I'll give that a go as well!
