Iuse equal measures if Plain flour , Eggs and Milk normally measured out with a ramekin and then mixed , doesnt matter if it has lumps in and then add some suet and salt and pepper ,

Put some lard or dripping in a tin to make individual Yorkshires and heat till the fat is smoking and then put it direct on the heat on top when pouring the batter mix in and put it back into the oven on a very high heat and cook till risen and done , i must admit i never time them when they look done they are done and normally da bit doughy in the centre which i love

I've never used suet. 4oz of plain flour, 2 eggs and 1/2 pt milk, (doing them so long now that I don't measure anymore) beat well until lots of bubbles on the surface, rest in the fridge of at least 1/2 hour. I always use lard, again wait until smoking hot, get the batter out of the fridge and put in a couple of table spoons of really cold water, pour into tins. I always do small one, they take between 20 - 30 minutes. I can honestly say that the yorkshires turn out every time.
