OK it won't win any cordon bleu prizes, but it is popular with kids, and you can easily make it camping or in self-catering because the corned beef doesn't take long to cook, and you don't need an oven (or a fridge)

and it's cheap

Ingredients
1 onion
garlic (optional)
1 tabsp cooking oil
1 pepper (optional) any colour
1 tabsp flour
1 glug of red wine (optional)
1 tin chopped tomatoes
1 oxo cube
1 tsp herbs
1 tin corned beef 340g size

Chop the onion (and garlic) and fry gently in the oil in a pan. Chop the pepper and add it in.
When they are softened and starting to brown add the flour and stir for a minute or so.
add the wine if you have a bottle open
and the tin of tomatoes
possibly a little more water (swirl it round in the tin to get the last bit of tomato out, but not too much water or you'll have soup )
Crumble in the oxo cube and add the herbs. Stir.
Simmer gently for about 10 minutes until the veg are tender. (I put a lid on the pan).
Chop the corned beef, add in and stir so that the chunks break up.
When it is hot, it is ready to eat

If you are eating it straightaway, remember to cook the spaghetti while you are making the sauce

I usually make it in advance, without adding the corned beef, and then add the corned beef wheh I am heating it up again.

This recipe makes 4 portions.

You can make an easy curry in the same way, just adding curry powder or paste at the start, and leaving out the wine, oxo and herbs

My mum used to make these when we went camping when I was a kid...
and I made it for my boys when we went S/C to Menorca, and they've liked it ever since
Son made it at scout camp too

Actually I'm glad it's been resurrected, as son no1 has been asking for easy recipes for when (if) he moves into his new house...

so I've just copied and pasted it, and emailed it to him
