200g/7oz flour
60g/2oz cocoa powder
1 Tbsp baking powder
(half a teaspoon) of salt
120g/4oz sugar,
60g/2oz plain chocolate chips and 30g/1oz white choc chips.
2eggs
12oml/4floz sunflower or vegetable oil.
250ml/8floz milk
1tsp vanilla essence.
pre-heat oven to 400f or 200c or gas mark 6.
line a muffin tin with pieces of foil or muffin cases (tescos sell these)
Sift the flour, cocoa powder, baking powder and salt into a large bowl.
Stir int he sugar and chocolate chips, and make a well in the centre.
In another bowl, beat the eggs with the oil until foamy.
Gradually beat in the milk and vanilla essence. Pour into the well and stir until just combined.
Do not over mix, the mixture should be slightly lumpy.
Spoon the mixture into the prepared cases, filling each about three quaters, bake until risen, golden and springy. about twenty minutes, cool for two minutes then transfer to a wire rack.
I add chunks of dark and light chocolate, mars bars, and smarties, any choc that takes your fancy.
i could give you a recipe for smarties cookies too. if anyones interested let me know.
