1 lb mixed fruit
8 oz marg
1 mug of sugar
1 mug of cold tea
half teaspoon of Bicarb
half teaspoon salt
2 mugs of self raising flour
2 eggs
cherries
In saucepan put.....mixed fruit, marg, sugar, tea, bicarp and salt. Bring to boil and simmer for about 5 mins.
Allow to cool for a while (I don't!).... add the 2 mugs of flour...2 eggs (beaten first)...wash the glace cherries to remove the syrupie stuff on them and stir them in.
Grease and line 8" cake tin....put mix in...sprinkle top with sugar and bake in low oven gas 2 for about 2 and half hours. (Think I do mine at a slightly higher heat....for about hour or so... - check its cooked by putting knife into centre and it should come out clean)
