Mushroom soup1 lb mushrooms chopped
3 oz butter
2 medium onions, chopped
2 tablespoons plain flour
1 litre hot vegetable stock (I use a vegetable oxo cube)
Salt and freshly ground black pepper
Melt butter, add onions and soften
add mushrooms and cook for a few minutes
sprinkle over flour and mix
add stock and simmer for 10 minutes
either blend with a stick blender or in a food processor until smooth
you can add garlic at the onion stage and a bay leaf at the simmering stage also 3fl oz cream at the serving stage but I like it as above.
