Healthy muffin recipe pleaseYounger daughter has to make some healthy eating muffins for Food Tech this week. Does anybody have a recipe? I've searched the net but it's all American measures and cups. She wants to be able to eat them herself I've bought a muffin tin.Now all she has to do is make them.

Have you got one of those rubbery muffin tins Hils? BRILLIANT! I do my yorkshires in them. Mines from Lakeland..but they're £10 in Waitrose!

I have a lovely muffin recipe .... but it's defo NOT healthy
You won't get a "healthy" (proper) muffin recipe ... they're far too high in fat and sugar to be remotley healthy
Maybe if she made something like banana & walnut ones they could be classed as healthy?

Ingredients
115g/4¼ oz butter
100g/3½ oz brown sugar
3 bananas, mashed
115ml/4¼ fl oz milk
1 tsp vanilla extract
2 free-range eggs
175g/6¼ oz wholemeal flour
100g/3½ oz wheat bran
1 tsp baking powder
1 tsp baking soda
¼ tsp salt
Handful chopped walnuts, to taste
Method
1. Preheat the oven to 190C/375F/Gas 5 and grease a muffin tin or line with muffin cases.
2. In a large mixing bowl, cream the butter and brown sugar until fluffy. Add the bananas, milk, vanilla and eggs and mix well.
3. Combine the flour, bran, baking powder, baking soda and salt and blend into the banana mixture. Stir in as many walnuts as you desire and pour the mixture into the muffin tray or cases.
4. Bake for 20-25 minutes or until a toothpick inserted into the centre of the muffin comes out clean. Cool in the tray for five minutes then place on a wire rack to cool completely

1tbsp baking powder
50g wholemeal flour
75g unrefined caster sugar
175ml semi skimmed milk
1 medium egg, beaten
100g butter, melted
Zest and juice of 1 orange
110g thick cut marmalade

Thank you for all your recipes.
In the end she made cinnamon and raisin muffins. Shhhh...they were a bit hard but we ate them (as you do)
I'll certainly keep these recipes and try them myself.
