Gabanitzer - Yougoslavian dishThis recipe is from a yugoslavian friend and is to die for.
Ok, you need a large deep dish, preferably round or oval.
About 750g mature cheddar, 400g Feta cheese, both grated.
Whisk approx 10 eggs until light and fluffy, you need plenty of air in them. Add cheese, then get roughly 3 boxes of frozen filo pastry, defrost, then take a sheet at a time, doesn't matter if it splits, dipp into mixture and coat both sides, and scrunch up, then place in dish, repeat until dish is full.
Once completed, place in oven at 220 degrees in a fan oven, for roughly 25 mins.
Once risen and brown on top, leave to rest for at least 20 minutes.
I personally prefer it cold, but it can be eaten either way.
It is also ok to freeze
Enjoy it but i will warn you it doesn't last more than 24 hours in my house
and its really fattening...................
