fish pieanyone got a good fish pie recipe for me
i have some cod, smoked haddock, prawns and cream

I do the Jamie Oliver one Gail...ALWAYS turns out yum!
I usually use the cod loin and smoked cod loin from Tescos (no skin or bones!)..and prawns.
5 large potatoes, peeled/cut
salt ..pepper
2 eggs
2 large handfuls of fresh spinach (I use the bags of baby spinach @ tesco..then any left over I use in a salad)
1 onion finely chopped
1 carrot, finely chopped
extra virgin olive oil
approx 285 ml or half pint double cream
2 GOOD handfuls of grated mature cheddar or parmesan
juice of lemon (I've always got bottle of lemon juice)
1 heaped teaspoon English Mustard (realised when I saw him 'do' this that he used ready mixed mustard....but I've used teaspoon of dried mustard before)
1 large handful of flat leaf parsley finely chopped (I don't bother with this!)
1lb Haddock or cod, skin removed, pin boned and sliced in strips
Nutmeg (optional)
1. Preheat oven 230C .. 450F ..gas 8.
2. Put potatoes into salted boiling water and add the two eggs to hard boil.
3. When potatoes cooked and ready to be mashed..remove eggs and shell.
4. At same time potatoes are cooking..in steamer over saucepan steam spinach...about a minute...gently squeeze out excess moisture.
5. Drain potatoes...quarter the eggs..put to one side.
6. In frying pan slowly cook onion and carrot in olive oil for about 5 mins.
7. Add double cream and bring just to boil.
8. Remove from heat...add cheese, lemon juice, mustard and parsley.
9. Put spinach , fish and eggs into dish..mix all up..egg in each corner so everyone gets a bit!
10. Pour over the creamy vegetable sauce.
11. Mash potatoes adding bit of olive oil and touch of nutmeg if liked.
12. Spread over top....not YOUR top....over fish etc.
13. Put in oven and cook for about 25-30 mins until golden brown.
