Any soup you make yourself with be far healthier than any crap you buy in a can. Just ensure you use plenty of fresh veg. Avoid potatoes as they have a high GI. Possibly use whole wheat pasta to "fill" it out a bit as that has a lower GI.

Some carrots, 6-7 good sized ones
2-3 tablespoons dried corriander (got mine in tesco at the herbs/spices bit for 68p)
2-3 veg stock cubes
1 chopped onion
I sometimes put turnip in aswell
Add to large pan of water, cook untill veg soft then either mash it with potato masher or use blender.
Probably classed as 'free' for dieters

Roast approx 500 grams of tomatoes, 2 red onions and a red pepper (all cut into 1/4's before hand) Place on baking tray wth bulb of garlic (skins on) season and bake for 45 mins at 200.c approx. When done, remove and cool, remove garlic from skins and place in blender with the roasted tomaotes. pepper and onions. Blend with 1 pint of veg stock and 1 tbs of Balsamic vinegar and 1 tbs of worchestershire sauce. Place in pan and heat through on hob for a few minutes.

Sounds DELICIOUS! Might have to do this one. Is it quite sweet? When toms and peppers are roasted, then become naturally sweeter.

soupsIf we have any salad or veg left at weekend we do a soup, carrots, celery , onion, and the dark green spring cabbage all cut really fine, a cheap packet of spring veg soup and oxo, hubby puts tomatoes in but i don't, always tasty
Hubby also does the cabbage soup diet
cabbage, onion, spring onion, tin tomatoes, oxo, spring veg packet soup, celery, different combinations of tomatoes, smells lovely the first day, then gets a bit much as he as it for breakfast as well
