diabetic meals

i need some meal ideas for my hubby who is diabetic. it needs to be low in fat and low in carbs.

Re the diabetic meals.............when Im doing meals for Nathan Ive been told by his dietician that they HAVE to have a certain amount of slow energy releasing carbs because otherwise he will go "low" due to the insulin injections. I dont know if you are cooking for someone who is type 1 or type 2 as they are completely different conditions.

If its type two then you ARE probably trying to cook with as little carbs as possible.

I would suggest things like
chicken or beef stir fries.........obviously not swimming in oil, maybe just a dod of that spray oil......., mushrooms, chicken cubes, onions, garlic and any other vegetables you like...........with a splash of some kind of seasoning.

Beef casserole with vegetables

Sausage casseroles with no potatoes are fine

A breakfast grill containing bacon, sausage, egg, mushrooms, tomatoes but no bread etc is very low carb but not sure about the fat content! (grilled obviously)

I will have a google tomorrow and see if there are any diabetic recipe books available, but would basically say have a look at the Atkins diet.............they are all very low carb but dismiss any of the ingredients that have a high sugar/fat (or fructose) level.

guest Hi! I would be very interested in some recipes for someone who is insulin dependent. My mum has a terrible trouble keeping herself stable, and tends to bury her head in the sand rather. I have tried buying her recipe books, but in her words they are all "difficult" and not what she wants to eat No you have any "normal" recipes that she might be able to use?

Sue Im not the most adverturous cook in the world and bear in mind Nathan is only 12.............

But if you tell her that any "meat" is ok, she can eat as much of that as she likes.................any kind of meat at all. Same goes with fish.

Same with most vegetables, and she can add sauces or herbs or whatever she likes to spice them up(but make sure the sauce is not made with high sugar/carb content.............so a tomato based or garlic based sauce maybe made with chopped or tinned tomatoes would be ok..........(I actually make sauces from tins of soup for Nathan......chicken/mushroom/oxtail etc and add herbs and garlic to it to make it not so bland)
If she is insulin dependent she will want things with slow releasing carbs to counteract the insulin but not to give her a "quick blast" of energy as this will raise the sugar level and then it will fall dramatically and could cauase her to be ill.

So I would say if she is hungry then loads of meat, vegetables ............and then some "good" carbs............so she could have chicken curry with rice for example, rice is "good" carbs.

Or pasta, say spathetti bologanaise/chilli with a lot of sauce and cheese on top, as the pasta is the "good" carbs.

Even a sandwich, so long as its just two rounds of bread with whatever filling................bread again "good".......................but when I say "good" I mean to check the portion size as too much will obviously be "bad" again!!!!!!!

When Nathan wants to "snack" he eats things like little cocktail sausages, chunks of cheese and things like that with no carbs in them.

Things like Pizza, Garlic Bread, Pies, burger buns and obviously chocolate sweets etc will all give a "quick" blast of energy and then a sharp fall so should be eaten very sparingly.

Its important though to differentiate between the two conditions...........type 2 you will probably be eating as little carbs as possible as you are not taking insulin.

Type 1 its essential you do have the carbs for energy.

Its such a fine balancing act that its very difficult at times even for us and Nathan has been diagnosed since 2001!!!

Its difficult to work out what snacks for a diabetic to have between meals. which are tasty..........Nathan likes sausages with bacon wrapped around them and some grated cheese and herbs over the top...............no carbs at all and very easy to prepare!

Thanks guest that is really helpful, just what I was looking for, as she gets so muddled up, and ends up being ill again. She may take some notice now if I suggest that she ups her meat, fish and vegetable intact. She seems to think she can't have too much of them. What about butter and cream?

Thanks too, GQB, for that index. Very good, and specially for me, as when I do diet I like to use the GI diet. I even bought the book for my mum, rather than another diabetic cookbook, but she found it too confusing!!! Thats why Scarletts suggestions are perfect for her.!!!!

I'm of the firm belief that labelling a diet "diabetic" just leads to people being miserable. It's all about eating a healthy balanced diet, IMO.

For example, jacket potatoes aren't great, but they aren't BAD either. You can, say balance this high glycamic load with beans. I also am a firm beliver in cooking your own food and not eating ready meals, which are full of hidden fat, salt and sugar......as well as tasting crap.

And of course, the occasional treat.

Glad it was helpful Sue..............if your mum is anything like mine she wouldnt want a complicated recipe book anyway, just to be told whats "ok" ..................sauces are all ok in small doses, for "basic" things like tomato ketchup buy the low sugar ones.........but if you mean "creamy" sauces tell her to buy cream of chicken/mushroom soup and to add a few herbs and spices to liven it up..............its lovely over a sausage casserole or plain roasted chicken. Butter is ok, but not too much for someone elderly, cream go easy on it!

As Queenie says, nothing is really "not allowed" its just a matter of eating anything sweet on a special occasion!

i have always thought that type 1 or 2 were both
the same food

with a controlled amount of carbs for energy

any clients of mine that i make food for as home help
always have some carbs at each meal

some are insulin dependant
some are on tablets (thats how they get their insulin)
and some who are not too bad can control it by diet alone
