Chocolate sauce cakeThis is a good recipe to try with children they can be amazed at the sauce ending up on the bottom
For the Sauce
2 tbs cocoa
50g soft light brown sugar
300ml boiling water
For the Sponge
2tsp instant coffee
1tsp boiling water
75g softened butter or marg
75g caster sugar or soft brown sugar
75g self raising flour
2 size 3 eggs
icing sugar to dust
preheat oven to gas mark 4
To make sauce place cocoa in a jug and mix to a smooth paste with a little boiling water stir in sugar and remaining water and set aside.
To make sponge dissolve coffee in boiling water in a mixing bowl. Add remaining ingredients and mix till smooth.
Divide mixture between 4 250ml oven proof ramekins or souffle dishes.. Smooth surface and carefully pour sauce on top.
Place dishes on a baking tray and bake for 15-20 minutes or until sauce has sunk to the bottom and top is well risen.
Dust with icing sugar and serve hot preferably with ice cream.

Ooooh yum!!! And I don't think it'll only be the children being amazed either!!! I think I will be too!!!!! I've got soft dark brown sugar, can I make it with that?
