THE THIEF OF BAD GAGS

This is the one i use normally
Ingredients
oil, for greasing
350g dark chocolate, broken in small pieces
250g unsalted butter
3 eggs
250g dark muscovado sugar
100g plain flour
1 tsp Baking powder
Method
1. Heat the oven to 170°C/gas 3. Lightly grease a 22cm square cake tin.
2. Melt the chocolate and butter in a heatproof bowl set over a pan of simmering water.
3. Whisk the eggs and sugar together for 2-3 minutes until smooth and fluffy.
4. Fold the chocolate mixture into the egg mixture.
5. Sieve the flour and baking powder into the mixture and stir to mix. Pour the mixture into the cake tin.
6. Place on the middle shelf of the oven and bake for 35 minutes until the surface is set. It is cooked when it just starts to crack on the top. Remove from the oven. Allow to cool completely in the tin.
7. Slice the cake into squares and store in a tin or in a container in the fridge.
very good and come out great everytime BUT there is one i have used that involves coco pops and popping candy(difficult to find) it is absolutely to die for but cant find the recipe and cant for the life off me remember which chef did it ,
i willhave a look and see if i can find it , but may take a while

I use this one.....topping is JUST like the chocolate on cup cakes! I double ingredients and cook in a roasting pan!!!
4 oz S.R Flour
quarter level teaspoon salt
1 and half oz of cocoa
4 oz butter
8 oz soft brown sugar
2 eggs, blended
1 tablespoon milk
375 degreesF or Gas mark 5
For Icing
1 and half oz butter
1 oz cocoa SIEVED
3 tablespoons evapourated milk
4 oz icing sugar SIEVED
1. Grease oblong tin 11 x 7 inches and 1" deept
2. Sieve together flour salt and cocoa
3. In another bowl beat butter and sugar until light and creamy
4. Add eggs little at time, beating well after each addition.
5. Fold sieved ingredients into mixture with milk and mix well
6. Turn into prepared tin.
7. Bake in moderately hot oven for about 35 mins until centre of sponge springs back when lightly pressed. Allow to cool in tin.
Icing
1. Melt butter for icing and add cocoa..cook over low heat for 1 minute!
2. Remove from heat and add evapourated milk and icing sugar. Mix thoroughly.
3. Spread over cake in tin and leave to set. Then cut cake into 15 squares.
