Spicey Sausage Soup
Great for chilly evenings - everything from store cupboard and very quick.
I usually cook it in the microwave.
The basics are -
Tin of Ratatouille
Ring Sausage (Dutch Sausage?) I cant remeber what you call them but they come in a packet - Mathesons do it and Asda own brand 1 is easily enough for 2-4)
Green/runner beans (frozen or fresh)
Tin of sweetcorn
Spagetti

- Chop the sausage as small or chunky as you like - add the ratatuille(chopped ,blended or left chunky) and the green beans and corn.
-At this point add whatever else you fancy - I like to spice it up a bit with some chilli and worcester sauce.
Make it go further with a can of baked beans or add whatever you want using up (diced carrot, cabbage, mushrooms, chopped tomatoes, peas?) add about a pint of water.

Cook till veg is tender then break up spagetti into short lengths and add to pan - cook through for about 10 mins till spagetti is soft.

Serve with warm crusty bread or toast and a bowl of grated cheese.

So quick and easy and ideal for an impromptu supper with friends (bit like a chunky minestrone)
