Hi everyone, back from Oz a while now, but forgot my password. Picked up a lovely recipe for cocnut cake when I was there.

YOU NEED;
1 cup of sugar
1 cup of coconut
Half a block of butter
1 beaten egg
1 cup of milk, or cocnut milk
2 1/2 cups of seived flour


Lightly grease and flour a loaf tin
pre heat oven to 180 degrees

take a large pan, place sugar, butter, cocnut, milk in, and gently  heat 'till butter has melted. DO NOT BOIL.
When the butter has melted, take off heat and cool. pour in the beaten egg, and mix together.
Stir in the seived flour slowly.
place in the cake tin and bake for 40 mins, then turn oven down to 150 for 15 mins. After that time do the skewer test, to see if it is cooked.
Sometimes, it may need a few more mins.

I've not stopped baking this cake since I got home. Nick loves it. It keps for a good few days if wrapped in foil. Also lovely with custard over, yummmmm

I might just try this
Although having coconut would mean it ispretty fattening.
But what the heck
