CURRIED POTATOES WITH PEAS

Tuesday nights dinner

SERVES 2

700g potatoes
2 tsp vegetable oil
2 pinch cumin seeds
2 cloves of garlic
120g of onion, chopped
300g peas
400g tin chopped tomaties
1 tsp curry powder

Cut Potatoes into 2cm dice & boil for 10-15 minutes or until tender
Drain & set aside
Heat oil in non-stick frying pan & add cumin seeds & crushed garlic
Cook for around a minuted & then add onion and cook until softened
stir in peas, tomatoes & curry powder & cook on low heat for 4 minutes
Gently stir in the potatoes & serve

We had this with a chicken breast

Sounds nice!  I do a version of this, but don't use tomatoes, although I might try it with.
I use garam masala (about a heaped tablespoon) and omit garlic.

I only par boil the cubes of potato

Then fry off the onions and potato, stir in the garam masala, add salt.  Then add a bit of water, and cover the pan.  Keep checking until cooked, adding a bit of water as needed.  Add a bit of sugar if a bit too spicy or bitter. I prefer the potatoes a bit soft, and ever-so-slightly mash them with a fork.  Not mash  MASH, more stirred together roughly.   I also add peas nearer the end.  It's also really nice with green beans.
