This is a good dinner party lemon dessert

Ingredients

8 trifle sponges (one packet)
4oz unsalted butter
6oz caster sugar
4 eggs seperated
2 large lemons
large carton whipping cream

Use a 2pt basin or souffle dish

1. Cream butter and sugar until pale and fluffy
2. Beat egg yolks
3. Add egg yolks into the mixture a teaspoon at a time beating well after each addition to prevent curdling
4. Add the grated rind of both lemons and their juice, a little at a time
5 Whisk egg whites
6. Fold into the mixture with a metal spoon
7. Split the sponges lengthways
8. Place four halves in the bottom of the dish and add a layer of the mixture ontop. Continue until the mixture has finished and you have sponge ontop.
9. Cover with foil and place a plate ontop and press down with a weight ontop.
10. Put in fridge overnight
11. Leave at room temperature for a while then turn upside down and carefully remove from dish
12. Whip cream and cover the cake
13. Refrigerate until ready to serve.

In that case Skyegal, you will love it.It's so easy and tastes divine.Don't know about the calorie count though..best not think about it
