Does anyone know what goes in the lovely yellow creamy sauce you often get with Tandoori and Tikka meals at Indian Restaurants? I can guess cream and mint but theres obviously something else too - maybe turmeric to make it yellow? but mine never tastes the same

Not sure Bobian which one you mean but i have a book called the Curry Bible by Madhjur Jaffrey so will have a look for you in there later , also i have a small book got it Goa that has a lot of very good recpies so will check that out in the meantime have a look at this http://www.curryfrenzy.com/curry/html/curry-recipes.asp you may find it there

Thanks for that TOBG - great link! I'll book mark it to have a really good look through later - but... think they've got what I was looking for - called Poppadom sauce, and the magic missing ingredient appears to be mango chutney They wop it all in a liquidizer and blend it - so I will try it that way next time and let you know
Thanks again - I am usually quite good at replicating meals I've had in restaurants and working out ingredients but this sauce had me stumped

it depends on the chef..

could have garlic in, pepper, lemon juice, corriander leaves, cumin powder..

many many different things go in it...

Thanks Cy - I think this is the one but I have a feeling a lot of the restaurants probably use some kind of powder mix.
Havent had a chance to make this one yet but I think the Mango chutney or perhaps a mango powder was the missing ingredient

I would possibly try cream though instead of yogurt? or a mixture?
