National Trust Pie!!!!

YUM! I tend to add more mango chutney/curry powder to 'our' taste!

National Trust Pie

1 and quarter pound of mince
2 onions
1 carrot
half tablespoon curry powder
1 tablespoon Mango chutney
tomato puree – big squeeze
1 tablespoon chopped parsley (or dried)
1 tablespoon plain flour
half pint oxo stock

Topping
2lbs of mashed potato
2 leeks
3 oz cheese

1. Soften chopped onion in oil in frying pan.
2. Add mince…cook 10 mins
3. Add chopped carrot
4. Add curry powder, mango chutney, tom puree, parsley, flour and stock.
5. Bring to boil and simmer for 40 mins
6. Put in dish.

7. Mash potatoes really well and add 2 leeks (finely sliced and already cooked – 3 mins in micro)
8. Add 2oz + of cheese.
9. Cover pie with potatoe mix…brush with egg and rest of cheese and back 30 min .electric 200 degrees.

Spicey Meatballs (1)

1lb mince
1 carrot – blitzed in processor
1 onion - “ “
2 cloves of garlic
Italian seasoning (herbs – or some basil and oregano)
Oxo (2)
Bread or porridge oats
Salt n pepper
2 tins tomatoes
big squirt of tomato puree
Chilli powder (optional)
Flour

METHOD

1. In bowl mix with hands… mince, 1 oxo cube, carrot, herbs, onion.
2. Add EITHER blitzed couple slices of bread OR small handful of porridge oats (I always use oats…it bulks the meat up and it FULL of fibre)
3. If you want them a tad spicey…add about half teaspoon or bit more of chilli powder…I’ve got these sort of flakes that I bring back from Turkey
4. Season and make into balls (Can usually get about 6)
5. Roll in seasoned flour and quickly fry in small amount of oil just to seal…5 mins?
6. Put in casserole dish.
7. Blitz the tinned toms …tom puree…oxo….bit more chilli powder….oh..and I usually add a teaspoon of sugar too …can also chuck in a teaspoon of the herbs if you want.
8. Pour over meat balls…cook in oven…prrrff I dunno …about 190-200 electric for about 45min – 1 hour.
Serve with jacket potatoes (I usually do them in microwave until NEARLY done..rub olive oil and some salt into the skins..and pop in oven to finish off with the meatballs)..and veg….(runner beans are quite nice..or peas!)

SPICEY MEATBALLS (2)

1lb mince
1 onion – blitzed
2 cloves of garlic
Italian seasoning (herbs!)
1 biggish teaspoon chilli granules
1 oxo
seasoning
1 egg
1 jar of either M&S Sweet chilli marinade…or a stir fry sauce from Tescos…forget the name…but will check next time I’m up there…sort of see through reddish sauce.

1. Mix mince, onion, herbs, chilli, oxo, seasoning, together..and bind with egg.
2. Make into smallish sausage shapes…about ..pprrf I dunno….size of …a sausage..but not quite as long??
3. Put on greased foil on baking tray and cook in oven for about…..erm..till done!....about 30+ minutes 200 degrees.
4. Heat sauce up in microwave..and pour over…serve with big chunky chips and salad!!!
