Bobian, I just use the standard cake mix recipe but replace the flour with Juvela Gluten Free mix.

There are tons of gluten free flours around, all a bit different. We get ours on prescription, its very expensive to buy but I have occasionally seen it in Boots.

Supermarkets sell a Doves Farm one but I have only seen it plain, not self raising - great for jam tarts but I have never tried it for buns. If you do use that one, make sure the baking powder you use is gluten free, not all of them are!

Anyway, for 12 buns I use:

4 oz stork marg
4 oz castor sugar
4oz Juvela gluten free mix
2 large eggs

Mix the butter and sugar together until light and fluffy.

Add eggs one at a time with a little flour

Add the rrest of the flour and mix well.

Bake for about 15 mins at gas 4 to 5.

They are very easy to overcook so keep a close eye on them.

Get them out the bun tin and onto a cooling rack asap as they'll carry on cooking in the tin.

Icing - I just use icing sugar and water, plus green or blue colouring if we are feeling gross!
