I've been experimenting this week & have made something I've never had before every night.
Here's Mondays dinner
FEEDS 2
2 Medium Chicken Fillets
1 tbs soy sauce
half tbs rice vinegar
1 onion
1 pepper
2 carrots
180g baby sweetcorn
12 water chestnuts
Preheat oven to 180 degrees c
Place chicken in a baking dish & pour over the soy Sauce & vinegar
Top with the sliced vegetables.
Bake for 40 minutes, covered in foil
Serve with rice

did you use pre cooked chicken.
4 mins in the oven doesn't sound enough cooking time, for either chicken or veg.
it does sound nice though.
