Hi Katies Mum,
My Turkey is 8.9kg and I am taking it out of the freezer tomorrow evening and leaving it to defrost a room that I will have turned the rad off in (you just don't have enough cold storage over Christmas do you :? ) and I will be cooking it Christmas morning, I always prepare it the night before by stuffing loads of butter under the breast skin, covering it completely in bacon rashers and wrapping it in foil... I baste it several times during the cooking, using the 15mins per lb plus 15 mins method... I usually time it to be cooked for 1pm so that it frees up oven space for the rest of the dinner :wink:
and we eat at 2.30pm ish....
